If you have prime rib leftovers from the night before, you’re in luck. This piece of meat can be transformed into other delicious recipes that you’ll enjoy. You can make sandwiches, quesadillas, burritos, pasta, and stroganoff.

I learned how to make prime rib recipes in cooking school years ago. After a while, I started experimenting with how to use rib leftovers, and I combined the recipes I learned earlier to make the tastiest leftover dishes. Read on to discover my delicious leftover prime rib recipes.

Let’s look at five of my favorite leftover rib roast recipes that you can easily prepare.

1. Leftover Prime Rib Stroganoff

My special beef stroganoff recipe is made with leftover prime ribs and other ingredients that make a delicious sauce that you can eat with different dishes. You can make this recipe using readily available ingredients, and the final dish can get you and your guests hooked.

Ingredients

  • 1 pound of leftover prime rib roast
  • 1 minced shallot
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 2 tablespoons of Worcestershire sauce
  • 2 tablespoons of all-purpose flour
  • ½ tablespoon of minced garlic
  • ½ teaspoon of ground sage
  • ½ teaspoon of thyme
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper
  • 2 cups of beef broth
  • ½ tablespoon of Dijon mustard
  • ¼ cup sour cream

Instructions

  • Start by heating olive oil over medium-high heat in a deep frying pan. Then add the minced shallot and garlic and cook for 1 minute. Next, add butter to the pan.
  • Now, add the flour to the pan and mix until the flour is properly incorporated. Season with ground sage, thyme, salt, and pepper, and stir. Now add Worcestershire sauce, No products found., and beef broth to the pan.
  • Stir all the ingredients and reduce the heat to medium. Allow the ingredients to simmer at this temperature for about 10 minutes. The sauce should be thick by now.
  • Once the sauce has reduced and thickened, add the cooked prime rib and cook for an additional 3 minutes to thoroughly heat the meat. Remove from the heat, add the sour cream, and stir thoroughly. Serve the beef stroganoff right away with potatoes, noodles, or rice, and enjoy.

2. Leftover Prime Rib Sandwich

If you want to prepare a quick and easy meal, a leftover roast beef sandwich is an excellent choice. This recipe combines creamy and meaty flavors to create a filling delicacy. Here’s how to make a leftover prime rib sandwich:

Ingredients

  • 1 pound of leftover prime rib
  • 8 slices of sourdough
  • 2 cups of arugula
  • 2 thinly sliced onions
  • 2 tablespoons of butter
  • 2 tablespoons of mayonnaise
  • 1 teaspoon of horseradish
  • 1 teaspoon of olive oil
  • 1 teaspoon of white balsamic vinegar
  • ½ teaspoon of salt
  • ½ teaspoon of pepper

Instructions

  • First, melt butter in a skillet over medium-high heat to caramelize your onions. Add the sliced onions in a single layer and fry until they start browning. Make sure you reduce the heat gradually to avoid burning the onions and only stir when they get very brown. Cook until the onions appear dark caramel, then set aside.
  • Next, combine horseradish and mayonnaise to make the spread.
  • Dress arugula greens with vinegar and olive oil in a small bowl. Don’t forget to season with salt and pepper.
  • Finally, layer the spread, leftover roast beef, caramelized onions, and dressed arugula on the sourdough, and then serve.

3. Leftover Prime Rib Quesadillas

These delicious prime rib quesadillas made with leftover beef are cheesy, crispy, and tasty. The tortillas are lightly fried before being filled with a blend of creamy cheeses and tender pieces of prime rib.

Ingredients

  • ½ pound of leftover prime rib
  • 1 tablespoon of olive oil
  • 8 flour tortillas
  • ½ cup of shredded Monterey Jack cheese
  • ½ cup of shredded cheddar cheese

Instructions

  • Heat the olive oil in a large skillet over medium heat. Use a pastry brush to lightly coat the frying pan with olive oil. While cooking the remaining quesadillas, add more oil to keep the skillet lightly coated.
  • Next, combine the shredded cheeses in a bowl. Warm the first tortilla in the heated frying pan, then top with a layer of shredded cheese, your leftover prime rib, and top it off with more cheese. 
  • Cook in the pan until the cheese melts and the tortilla is lightly golden brown. Flip the quesadilla and repeat this step for the other side. This process should take roughly 2 minutes on each side. When you’re done, remove the quesadilla from the heat and follow the same steps for the other tortillas.

4. Leftover Prime Rib Burritos

These mouthwatering leftover prime rib burritos combine the tastiness you get from a regular burrito with tender prime rib. Let’s look at how to make this delicious prime rib recipe.

Ingredients

  • ½ pound of prime rib roast
  • 8 ounces of black beans
  • ¼ cup of shredded cheddar cheese
  • ¼ cup of guacamole
  • 4 tortillas
  • ¼ cup of cilantro
  • 1 tablespoon of olive oil

Instructions

  • Preheat the oven to 250 degrees Fahrenheit.
  • Cut the leftover steak into thin strips and wrap them in aluminum foil. Before sealing the foil, drizzle some beef broth over the meat for added moisture.
  • Warm the leftover meat in the foil pouch in a preheated oven for 5–10 minutes until the beef is warm.
  • Now, it’s time to heat a skillet over medium heat with a drizzle of olive oil and cook the drained black beans.
  • Next, warm the tortilla in a skillet over medium heat for 30 seconds per side.
  • Layer all your fillings (cheese, guacamole, cilantro, black beans, and leftover ribs) in the center of each tortilla and wrap the burrito.
  • Roll the burritos by folding the opposite ends, and tuck the burrito tightly as you roll it to wrap the fillings.
  • Next, heat a large skillet over medium-high heat, then lightly coat it with cooking oil.
  • Cook each burrito for about one minute with the seam side down. Remove the burrito when it is golden brown. Lastly, flip the burrito and cook the opposite side.

5. Leftover Prime Rib Pasta

This quick and easy pasta recipe is a delicious way to use your leftover prime rib roast. This recipe can be served as a main course, with the prime rib being the focal point.

Ingredients

  • 2 pounds of prime rib
  • ¼ cup of red wine au jus
  • 1 cup of beef broth
  • 10 ounces of penne pasta
  • 8 ounces of portabella mushrooms
  • 1 tablespoon of minced garlic
  • 1 teaspoon of black pepper
  • Freshly chopped parsley

Instructions

  • First, slice your leftover prime rib and No products found..
  • Then, cook the pasta according to package directions and set aside after draining and rinsing in cool water.
  • At this point, add the beef broth and the red wine to a large skillet.
  • Next, sauté the sliced mushrooms and minced garlic. Cook for 5 minutes, or until the mushrooms are tender.
  • In the same skillet, add the leftover prime rib to the garlic and mushroom sauce and cook for 10 minutes.
  • Once you’re done cooking the sauce, serve it over the cooked pasta and garnish with black pepper and freshly chopped parsley.
